This 12 year Aged Dark Balsamic Vinegar is produced in a varietal of wood barrels that are charred on the interior to add character and complexity. This balsamic undergoes cooking in copper kettles over an open wood fire before being placed in the wood barrels to age. The result is a complex yet tart vinegar with a touch of sweetness and subtle dried fruit characteristics. It has a maximum acidity of 6%. This is the balsamic used for the infusion of all our aged dark flavored balsamic condimento's.
This balsamic is progressively aged in wood barrels according to the Solera Method. It is PGI (Protected Geographic Indication) certified to come from Modena, Italy.
