Ingredients
- 1/4 CUP Pineapple White Balsamic
- 1/4 CUP Cilantro Roasted Onion Olive Oil
- 3/4 CUP cucumbers (cut with spiralizer)
- 1/4 CUP chopped medium red onion
- 1 Bunch Cilantro (chopped)
- 1 1/2 CUP chopped fresh pineapple
Directions
Whisk the first 2 dressing ingredients in a small bowl; set aside. Spiral cut the cucumber (removing the seeds). Chop the onion, pineapple, and cilantro. Mix together in a large bowl. Add the dressing, toss, and serve.
*Alternate Dressing Recipe (eliminates oil)*

- 1/4 CUP water
- 1/4 CUP sugar
*Whisk until sugar is dissolved*
